Firstly before I start, I wrote this weeks e-mail from the shores of the south coast of Spain and I just want to say how good it feels to be happy with your body and have people look on at your incredibly low body fat as you walk by...... it feels better than any quadruple chocolate starbucks iced frappucino could ever taste! most of my clients would toast to that!

Now down to bussiness..... let´s face it... summer is nearly over (did it ever come?) most of you will have been on your hols for this year and are now just beginning to face up to the winter ahead.

Let me ask you a few questions...

  • Did you wear a bikini or an a swimsuit?
  • Did you wear a t-shirt the whole time you wear on the beach?, even in the sea because you were too embarrassed about your body?
  • Did you even go to the beach? 
  • Do you want to look the same next year?

Only a few people will have answered yes to that last one and I know exactly who they are, many thanks... it was a pleasure to work with you.

Now we all know winter is pretty bleak and the only thing to really look forward to is a fat man sliding down your chimney dressed in red & white, but unless you want to look like Father Christmas on his summer holiday again next year on the beach now is the time to do something about it!

You need to face facts, if want to look good you need to start now! you need time and you need consistency and you need a solid eating and training programme. Spring is too late, apart from the fact that all the good trainers will be fully booked and unless you only have around 8 kilos to lose you wont see any significant difference..... so what´s it gonna be next year?

  • Stared at with envy?
  • Or stared at with sympathy?

Recipe of The Month

Apple Chicken

Ingredients: 450g boneless skinless chicken breast, either whole or cut into pieces (see below) - 1 small apple, cut into ¼ inch
slices · ¼ cup apple juice (not from concentrate) · ¼ cup dry white wine (or chicken broth) · 1/3 cup heavy cream · 2
Tbps extra virgin olive oil plus one more of oil, or butter · 1 teaspoon dried thyme - or use tarragon or a mix of "French-type" herbs, 2-3 teaspoons · 2 strips bacon, cooked crisp and crumbled · salt and pepper.

Preparations: Heat 1 to 2 Tablespoons butter in pan. Lightly brown apple
slices in pan. You don't want them to be too soft, just to the point where you can start to easily put a fork in them. Remove apples.
2) Add another Tablespoon of oil, and brown chicken on both sides. The chicken probably won't be cooked through at this point, which is OK. Push chicken to one side or to the
edges. Add the wine, which should de glaze the pan. Add the rest of the liquids and herbs and simmer until reduced and chicken is cooked through. 3) Serve with bacon bits sprinkled over the top. Makes three servings (or four less-hearty servings).

Nutritional Information: Each of 3 servings has 7.5 grams effective carbohydrate plus 1 gram fiber, 37 grams protein, and 403 calories (actually a little less, because most of the wine's alcohol will cook out).
